Locust Flower Muffins 2 cups flour 1/2 rounded tsp salt 2/3 cup sugar 4 tsp baking powder 1/4 cup melted butter 1 egg 1 cup milk 2 tsp vanilla 2 cups black locust blossoms Whisk together dry ingredients in large bowl. Beat wet ingredients together in smaller bowl. Preheat oven to 375 degrees and butter 12 muffin tins. Dump flowers on top of dry ingredients, then pour the wet ingredients over. Stir just until everything is moistened with no large clumps. Fill 12 muffin cups equally with batter (about 3/4 full). Bake for 25-30 minutes or until toothpick stuck in center comes out clean.
